Collard Green recipe

I had a lovely huge collard greens harvest in my garden and asked for vegan recipes to cook these on Facebook. I combined two of the recipes I got (Thank you, Akia and Alanna!), and came up with this tasty concoction:


A bunch of collard greens

1-2 Tbsp Olive oil

1/2 cup Vegetable Broth

1 Onion

3-4 cloves Garlic

1/2 Tbsp Apple Cider Vinegar

1 Tbsp Miso

Salt and pepper

1-2 Tbsp Maple Syrup or Coconut Treacle/Nectar

Cook the onions and garlic in olive oil over medium heat until translucent. Add the greens and vegetable broth. Cook the greens down, then add the vinegar, miso, syrup, and salt and pepper to taste. Turn the heat down to low/simmer, cover, and cook for another 15-20 minutes. Enjoy!
